As a lifelong vegetarian, I know that sometimes my friends or extended family would struggle with what to prepare for me during holiday get-togethers. After eating my last tofu turkey, I decided to come up with a flavorful vegetarian dish that I could bring for dinner for everyone would enjoy.

According to Chinese Medicine, fresh ginger (Shēng Jiāng), is spicy, slightly warm, and goes to the Lung, Spleen, and Stomach meridians. Fresh ginger warms the middle jiao, stops nausea and coughing, and resolves toxicity (which is why fresh ginger is always served alongside raw fish in sushi restaurants!) It is perfect for people who always feel cold, have poor digestion, or have a cough they can’t seem to shake.

Frittata are some of the easiest thing to make. It’s basically like if an omelette and a quiche had a perfect eggy baby - unlike an omelette you don’t have to flip it, and unlike a quiche you don’t have to worry about making a crust. Hooray for a low-maintenance dish you can whip up minimal ingredients and zero fuss!

I really love this healthy, smoked salmon frittata recipe. It’s one of my go-to dishes for dinner or brunch - plus you get tons of leftovers. It's naturally gluten-free and paleo-friendly. It can also be easily modified for Whole30 or dairy-free preferences.

Green Garlic Soup

Springtime means it’s green garlic season! If you’ve never worked with green garlic, you are in for a treat!

Green garlic is just regular hardneck garlic that you are used to seeing - the only difference is that the ‘green’ version is harvested in the springtime while the leaves are still green and before the bulb is fully formed. Basically, it’s baby garlic!

You can use green garlic anywhere you’d use regular garlic, but it especially shines in soups and salads, where the freshness and subtleties of the flavor can take center stage.

When some green garlic showed up in my CSA produce box this week, I was delighted and decided to combine it with asparagus and tender baby potatoes into a gorgeous green springtime soup!

You don’t need any special equipment to make this recipe - just an oven and a blender. So grab some green garlic next time you see it, and whip up some delicious green soup!

Taco Night Every Night

Taco night every night!! This is my absolute favorite dinner. I love how versatile it is - you can make it as whole 30, paleo, vegan, gluten-free as you want, or mix it up by adding in some grilled mahi-mahi, use tortillas instead of lettuce wraps, or serve it with tortilla chips instead of plantains (but seriously, you’d be missing out because these plantain chips are EVERYTHING). This recipe serves 4, packs beautifully for leftover lunches, and is just about as delicious as you can get.
