We are in the thick of summer; the long, hot, humid days that are often punctuated by afternoon storms. Often, I see patients this time of year complaining of digestive issues such as bloating, an overall feeling of heaviness and tiredness, as well as feeling hot especially at night. If that sounds like you, incorporating this food into your diet will help you feel better.
Watermelon is an excellent ingredient to cool you off, reduce digestive discomfort, and reduce the heavy/tired sensation. For a twist, try using watermelon in an unexpected way, such as this watermelon arugula salad. Crisp juicy watermelon and creamy feta were meant to be together in this sweet and savory dish! This salad is easy to make ahead, it travels well, and is sure to be a welcome addition to any table:
INGREDIENTS
3 cups 2-inch chunks watermelon, seeded
1 cup crumbled feta cheese
1 tbs extra virgin olive oil
Coarsely ground black pepper to taste
1-2 cups baby arugula (optional)
2 tbs finely chopped mint or basil (optional)
PREPARATION
In a large bowl, combine the watermelon, feta, and a few generous grindings of black pepper. For a little more zing, add the arugula, basil, or mint (or all three!) Drizzle with olive oil before serving
