Fresh Ginger Cake
If you love ginger, this is the recipe for you! The ultimate warming dessert, this zippy cake gets its delicious flavor from fresh ginger.
According to Chinese Medicine, fresh ginger (Shēng Jiāng), is spicy, slightly warm, and goes to the Lung, Spleen, and Stomach meridians. Fresh ginger warms the middle jiao, stops nausea and coughing, and resolves toxicity (which is why fresh ginger is always served alongside raw fish in sushi restaurants!) It is perfect for people who always feel cold, have poor digestion, or have a cough they can’t seem to shake.
This fresh ginger cake packs a big ginger punch (no the amount is not incorrect) that will leave you feeling warm and comforted.
INGREDIENTS
Makes one 9” cake, serves about 12
1 1/2 C all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 C packed light or dark brown sugar
1/2 C unsulphured molasses
1/2 cup minced, peeled ginger, (from about 4 oz./115g unpeeled ginger - a food processor makes quick work of mincing once you have the ginger peeled)
1 large egg
1 stick (unsalted butter
1/2 C water
Powdered sugar, 2TBS lemon zest, or Whipped Cream for serving (optional)
DIRECTIONS
Preheat the oven to 350°F. Grease and flour a 9-inch square baking pan and line the bottom with a square of parchment paper.
Whisk together in a medium bowl: all-purpose flour, baking soda, and salt.
Whisk together in a small bowl: brown sugar, molasses, ginger, egg.
Combine butter and water in a medium saucepan and heat until the butter is melted,
Whisk into the molasses mixture. Stir the flour mixture into the molasses-butter mixture until just smooth. Scrape the batter into the pan.
Bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
Let cool in the pan on a rack for 10 minutes. Slide a thin knife around the cake to detach it from the pan. Invert the cake onto the rack, peel off the parchment paper, and turn right side up to cool completely.
Serve dusted with powdered sugar, or topped with whipped cream and lemon zest
