What I Read In 2017

Last year, I challenged myself to read 10 'real books' in 2017. And by 'real books' I mean nothing that had to do with work, no medical journals, no school books. Just plain old-fashioned reading for fun. I surprised myself that I was able to do it in addition to all of the other things I read. It was such a fun challenge, I'm going to do it again in 2018! One Pan Dinner

I love to cook; I look forward to cooking dinner almost every night. Except the nights I have to work late, or the nights that I'm tired, or when I'm so hungry I can barely wait for food to come out of the pan. So, basically I love to cook long, leisurely dinners once a week. The rest of the time I'm looking for ways to simplify my dinner routine so I can have healthy, tasty food in my belly ASAP.  I love anything that can be made in one pan, including this tasty ginger-honey glazed salmon.
